
Ingredients:
2 tbsp.olive oil
1 onion, chopped
3 garlic cloves, chopped
2 medium potatoes cut into cubes
1 cup green beans, cleaned and cut up
1 cup chopped pumpkin or butternut squash
1 can washed and drained chickpeas
2 cups of veggie broth
1 tsp. of turmeric
1 tsp. of cumin
1 dried bay leaf
2 orange or lemon slices
salt and pepper to taste
Instructions:
Put olive oil in a big pot and heat it over medium-low heat. Put in the garlic and onion, and cook until the smell is nice.
Put in the pumpkin, potatoes, cumin, turmeric, and bay leaf. Make sure to mix the veggies well so that the spices cover them.
Put in the vegetable soup and slowly bring it to a boil. Let it cook for 15 minutes.
Orange pieces, green beans, and chickpeas should be added. Keep cooking for another 10 to 12 minutes, until all the veggies are soft.
Before serving, take out the bay leaf.
