Banana Date & Walnut Loaf
Ingredients
1 3/4 cup plain flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
150g softened butter
1/2 cup brown sugar
2 eggs
2 tsp. vanilla
1/2 cup milk
3 mashed bananas
3/4 chopped dates
3/4 chopped walnuts
Directions
Preheat the oven to 180C or 360F. Grease a 20cm cake tin or a loaf tin.
In a medium bowl put the first 4 ingredients and with a whisk lightly mix together (easier then using a sifter) Set aside.
In another bowl cream together butter and brown sugar ingredients until light and fluffy. Add eggs one at a time, then add vanilla. Add bananas and stir and then add dry ingredients with milk folding in gently.
Lastly add walnuts and dates. Fold gently until mixed well.
Put in greased cake tin or a loaf tin and bake for 45 minutes or until brown and firm to touch.
Remove from oven and cool for 5 minutes before turning out on to a cake rack.
Cool completely before eating. (Tastes best the next day)
