Black Bean Salsa Burgers


Olive oil, for the pan

1 small onion, diced

2 cloves of garlic, finely chopped

1 cup chopped button mushrooms

1 cup rolled oats

1 can 15.5 oz. black beans, drained and rinsed

1 cup chunky salsa

1 tsp smoked paprika

1 tsp salt


4 - 5 vegan hamburger buns

Saute the onion and garlic. Brown the mushrooms.

Pulse the oats until you have mostly oat flour with some whole oats for texture. Remove to a bowl.

Pulse the black beans till pureed but with some whole beans for texture. Transfer to the bowl.

Put the salsa in a strainer and stir to remove the excess tomato sauce. Measure out 1/2 cup (130 gr.) of the super chunky salsa and add it to the bowl along with the sauteed onion, garlic and mushrooms.

Add the paprika, salt and pepper. Mix well. The mixture should be a bit wet but if it is to wet add a bit more oat flour. If it's too dry and doesn't stick together, add a couple tablespoons of the leftover salsa "juice".

Form 4 or 5 patties, depending on the size of your buns.

To bake, transfer to a lightly greased baking pan and bake for 20 minutes, flipping at 10 minutes. To fry, add a bit of oil to a pan over medium heat and fry 3 - 4 minutes on each side.

Once cooked, put on a wire rack for a couple minutes to firm up.
