Black Bean Soup
Ingredients
1 15 oz. can no salt added black beans, drained
1 cup celery, chopped
1/3 onion, diced
1/2 bell pepper, diced
1/2 jalapeno, diced
2 tsp olive oil
1 clove garlic, minced
1 14.5 oz. can chicken broth or vegetable broth
1 6 oz. can diced tomatoes
1 tsp cumin
1/2 tsp coriander
1 bay leaf
1/2 tsp lime juice
1/8 cup green onion, chopped
salt, pepper and hot sauce to taste
2 dollops of sour cream (optional)
Directions
In a large saucepan saute celery, onion, bell pepper, and jalapeno in olive oil for about 3 - 4 minutes, or until tender. Add garlic and allow to simmer for about one more minute, then add broth, black beans, tomato, cumin, coriander, bay leaf, hot sauce, salt and pepper.
Bring to a boil, then cover and reduce to simmer for 15 minutes.
Remove the bay leaf and then add the lime juice. Garnish with green onion and sour cream, then serve
