Blueberry Yogurt Protein Bites
Ingredients
1 cup vegan vanilla yogurt
1/2 cup almond flour
1/4 cup coconut flour
1/4 cup vegan protein powder, pea, hemp, or a preferred plant-based protein
2 tbsp maple syrup or agave nectar
1 tsp. vanilla extract
1/2 cup fresh blueberries
Directions
In a mixing bowl, combine vegan vanilla yogurt, almond flour, coconut flour, vegan protein powder, maple syrup (or agave nectar), and vanilla extract. Mix until well combined.
Gently fold in fresh blueberries into the yogurt mixture, being careful not to crush them.
Using your hands, shape the mixture into 12 bite-sized balls.
Place the bites on a parchment paper-lined tray and refrigerate for at least 2 hours to firm up.
Once chilled, the Vegan Blueberry Yogurt Protein Bites are ready to be enjoyed!
