Cauliflower Nachos
Ingredients
1 head cauliflower sliced in 1/4 inch slices
1 red bell pepper, diced
1/1 red onion, sliced thinly
1 cup cherry tomatoes, quartered
1 can black beans
1 cup vegan shredded cheese your choice
4 green onions for garnish
Optional- 1/2 cup frozen corn thawed or 1 ear cut off the Cobb.
Directions
Toss the first five ingredients in olive oil, salt, pepper, taco seasoning and crushed red pepper to taste. (Corn if desired)
Line a sheet pan with parchment paper, arrange veggies flat on pan.
Bake for 30 minutes at 375F
Add cheese evenly over nachos bake until cheese melts, 5-8 minutes. Remove from oven
Garnish with green onions and avocados.
