Cheesy Cauliflower Fritters
1 head of cauliflower
1 cup shredded cheese
1 tsp ground cayenne pepper
1/2 tbsp garlic
1/2 tbsp black pepper
1/2 seasoned breadcrumbs
Cut cauliflower into large chunks. Try to remove as much of the stem as possible, you want mainly the florets. Place in a large bowl, and add 1/4 c water. Cover with plastic wrap. Microwave on high to steam for 6 minutes. (You could also use a steamer on the stove top).
When steamed, drain and mash finely with a potato masher. Add egg, seasonings, breadcumbs, and cheese. Mix well.
Heat a griddle pan or skillet over medium heat. Spray with nonstick cooking spray.
Form patties with the cauliflower mixture, similar to a hamburger patty, but thinner and smaller.
Cook until golden brown on each side, about 3-5 minutes per side.
