Chicken and Rice Soup
Ingredients
2 tbsp. olive oil
1 medium onion, diced
2 cloves garlic, minced
3 medium carrots, sliced
2 stalks celery, chopped
1 cup uncooked rice white or brown
8 cups chicken broth
2 cups cooked chicken, shredded
1 tsp. dried thyme
1 tsp. dried parsley
salt and pepper to taste
fresh parsley for garnish, optional
Directions
Heat olive oil in a large pot over medium heat.
Add onion, garlic, carrots, and celery. Sauté for 5 minutes, stirring occasionally, until vegetables begin to soften.
Stir in rice, chicken broth, thyme, and parsley. Bring mixture to a boil.
Reduce heat to low. Cover and simmer for 20–25 minutes (or longer for brown rice), stirring occasionally, until rice is tender.
Stir in shredded cooked chicken. Simmer for another 5 minutes until heated through.
Season with salt and pepper to taste. Ladle into bowls and garnish with fresh parsley, if using.
