Chicken & Corn Chowder
2 large boneless skinless chicken breasts
5 slices of good quality bacon, cut up
1 onion, diced
2 celery ribs, chopped
1 red pepper, diced
1 clove garlic, chopped
1/3 cup flour
4 cups diced potatoes
1 12 oz. package frozen corn
6- 8 cups chicken broth
salt and pepper to taste.
1/2 cup milk
1/2 cup heavy cream
Cook the chicken in the chicken broth. Remove once cooked and dice. Save broth.
Cook bacon, add veggies (except potatoes) stir until cooked. Stir in flour, stirring until flours cooked and veggies are coated.
Add broth slowly until desired thickness.
Add the potatoes and chicken and corn.
Cover and simmer for 30 mins or until potatoes are cooked.
Add milk and cream, cover and simmer another 10 mins.
Served with chopped green onions, bacon, shredded cheese, and a loaf of garlic bread.
