Corn Fritters
Ingredients
2 cups corn, can also use canned or thawed frozen corn
1 cup flour
1 cup cornmeal
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. pepper
2 eggs
1/2 cup milk
2 tbsp.unsalted butter, melted
1 cup cheddar cheese, shredded (optional)
1 cupvegetable oil, for frying
Dipping Sauce:
1/2 cup sour cream
1 tbsp. fresh lime juice
1/4 tsp. chili powder
1 tsp. salt, to taste
Directions
In a bowl, mix the flour, cornmeal, baking powder, salt, and pepper together. Fold in the corn kernels, and cheddar cheese.
In a separate bowl, whisk together the eggs, milk, and melted butter. Add this to the dry ingredients and mix until just combined, being careful not to overmix. You will have a thick, wet corn batter consistency.
Heat about 2 inches of vegetable oil in a large skillet over medium heat.
Drop heaping tablespoons of the corn mixture into the hot oil.
Flatten them slightly with the back of a spoon.
Cook the fritters until they’re golden brown, about 3 to 4 minutes on each side.
Use a slotted spoon to remove the fritters from the oil, and drain them on paper towels. (Lightly sprinkle with salt while still hot)
