Corn Pudding
Ingredients
2 - 12-oz packages of frozen corn
⅓ c sugar
¼ c flour
2 tbsp corn meal
6 tbsp butter, melted
½ tsp salt
1½ c milk
4 eggs
2 tbsp chives
1 c shredded parmesan, divided into ½
Directions
Preheat oven to 350 degrees
In a food processor process one of the 12 oz packages of corn, along with sugar, flour, corn meal, butter, salt, milk and eggs
In a large bowl mix in ½ of the Parmesan cheese, second pkg of frozen corn, chives with the corn/flour mixture from the food processor
Pour into a greased 2 qt casserole dish
Sprinkle remaining Parmesan cheese
Bake for 45 to 55 minutes, until firm in the center and golden brown on the top.
