Creamed Spinach


20 ounces frozen chopped spinach, defrosted

1/2 cup minced onion

1 garlic clove, minced

1 tbsp. whole wheat flour

1 tbsp. light butter

1 1/2 cup So Delicious Coconut Milk Creamer

1/4 cup (1 oz.) Grated Smoked Gouda

1/2 tsp. kosher salt

1/4 tsp. fresh ground black pepper

Pinch nutmeg


Place spinach in a clean dish towel and squeeze out as much water as you can.

In a large non-stick skillet over medium heat, melt butter. Add onion and garlic and cook until the onions are tender, about 5 minutes.

Add spinach and cook for another 2 minutes or until spinach is hot.

Stir in flour and continue to cook and stir for 1 minute.

Add coconut milk creamer and bring to a simmer. DO NOT BOIL!

Stir continuously until mixture thickens, about 2 minutes.

Stir in gouda, salt, pepper and nutmeg and cook and stir until cheese is melted.
