Ingredients

4 cups potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

2 carrots, peeled and diced

2 celery stalks, chopped

4 cups vegetable broth

1 cup unsweetened almond milk

2 tbsp. olive oil

1/4 cup nutritional yeast (optional, for added flavor)

1 tsp. dried thyme

salt and pepper to taste

fresh parsley or chives for garnish (optional)

Directions

In a large soup pot, heat olive oil over medium heat. Add the chopped onions and garlic, and saute for 2-3 minutes until they become translucent.

Add Potatoes, Carrots, and Celery: Add the diced potatoes, carrots, and celery to the pot. Stir well to combine with the onions and garlic.

Add the dried thyme, salt, and pepper to the pot. Stir again to evenly distribute the seasonings. Cook for about 5 minutes, stirring occasionally.

Pour in the vegetable broth, ensuring that all the vegetables are submerged. Bring the mixture to a boil.

Once it’s boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes or until the potatoes and carrots are tender.

Blend with a hand blender or regular blender until smooth and return the soup to the pot.

Stir in the unsweetened almond milk and nutritional yeast if using. Allow the soup to simmer for an additional 5-10 minutes to heat through and let the flavors meld.

Taste the soup and adjust the seasonings, adding more salt and pepper if needed.

Ladle the vegan creamy potato soup into bowls. Garnish with fresh parsley or chives if desired.

You can also add toppings like vegan bacon bits, vegan cheese, or a dollop of dairy-free sour cream.
