Crock Pot Scalloped Potatoes


1/2 onion, diced

2 cloves garlic, minced

1 tbsp parsley

1 tsp salt

pepper to taste

7-8 potatoes, sliced thin

8 oz cream cheese (use Tofuti if vegan)


Lightly grease a crock pot.

In a small bowl, combine the onion, garlic, parsley, salt, and pepper.Place a layer of the sliced potatoes on the bottom of the crock pot.

Sprinkle with some of the onion and garlic mix. Top with 1/3 of the cream cheese.

Continue layering potatoes, spices and cream cheese. Sprinkle the top with additional salt and pepper.

Cover and cook on high for 3-4 hours, or until potatoes are done cooking.
