Crunchy Detox Salad
Ingredients
2 cups cauliflower, chopped
2 cups broccoli, chopped
1 cup red cabbage, chopped
1 cup carrots, chopped
1-1/2 cups fresh parsley, chopped
2 celery stalks, chopped
1/2 cup almonds, chopped
1/2 cup sunflower seeds
1/3 cup organic raisins
Vinaigrette:
3 tbsp. olive oil
1/2 cup lemon juice
1 tbsp. fresh ginger, peeled and grated
2 tbsp. clover honey
1/2 tsp. sea salt
Directions
Peparing the vegetables and herbs. You can either finely chop them using a sharp knife or pulse them in a food processor until they are finely chopped. Transfer the chopped ingredients to a large bowl.
Add the chopped cauliflower, broccoli, red cabbage, carrots, parsley, celery, almonds, sunflower seeds, and organic raisins to the bowl. Toss the ingredients together until they are evenly distributed.
In a mason jar or small bowl, combine the olive oil, lemon juice, grated fresh ginger, clover honey, and sea salt. Seal the lid on the mason jar and shake well to combine, or whisk the ingredients together in the bowl until smooth.
Pour the vinaigrette over the salad ingredients in the bowl. Toss the salad gently to coat all the ingredients with the dressing.
Refrigerate the dressed salad for up to an hour before serving.
Once chilled, serve the Crunchy Detox Salad as a refreshing side dish or as a main course for a light and healthy meal.
