Cucumber Relish


1 tsp mustard seed

1 tsp dill seed

3 Tbsp kosher salt or pickling salt

3 c cucumber, diced

1/2 c pepper, yellow diced

1/2 c pepper, red diced

1 small onion diced

1 c white vinegar

1 tsp celery seed

1 1/2 c white sugar

1 pinch tumeric

4 oz chile diced, mild

3 Tbsp cornstartch

3 Tbsp dark molasses


Finely dice vegetables. Mix and place in a bowl. Add the salt. Cover with ice water and let sit for a minimum of one hour.

Drain well. Rinse with water and drain again. Squeeze out all excess water. Use an emulsion mixer to your desired consistency.

In a saucepan heat all other ingredients to a boil. Add vegetables that have been drained. Boil five more minutes. Turn down and let simmer 20 more minutes.

If canning, place into your jars with lids and place in boiling water for ten minutes.
