Carrot Mashed Potatoes


5-7 large potatoes - peeled & cut into chunks

1/2 pkg frozen carrots rustica (chopped up yellow & orange carrots

1 tsp salt

1/2 tsp pepper

1/4-1/3 c sour cream

3-4 tbsp butter


Put chopped potatoes & carrots in a large saucepan. Cover with warm or hot water and add a pinch of salt.

Bring to a boil. Cook until potatoes are soft enough for a fork to go through easily - 25-35 minutes.

Drain and return to pan. Add sour cream, butter, salt & pepper. Mash until there are only small pieces of carrots in smooth potatoes.
