2 cups panko crumbs
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons butter, melted
1 pound white firm fish fillet, such as sole, cod, etc.
1.In a large bowl, mix panko, salt and pepper.
2.Cut the fish into 1-by-3-inch pieces; dip in butter, followed by panko.
3.Place on baking tray covered with parchment paper.
4.Bake for about 15 minutes, or until golden.
