Ginger Chicken


1/4 cup soy sauce

2 tbsp. fresh lime juice

1 tbsp. honey

1 tbsp. fresh ginger, peeled, grated

1 clove garlic, minced

1 tbsp, brown sugar

1 1/2 lbs. chicken breast tenders

3 cups vegetable oil for frying

3 cups flour

2 tsp. kosher salt

1 tsp. coarse black pepper

4 eggs, beaten

Peanut Dipping Sauce:

3/4 cup peanut butter

3/4 cup unsweetened coconut milk

1/4 cup brown sugar

2 Tbsp. fresh lime juice

2 Tbsp. soy sauce

2 Tbsp. fresh ginger, peeled, grated

Dash hot sauce


In large bowl, mix first 6 ingredients, stirring til sugar dissolves. Cut chicken into 1/2 inch strips. add chicken strips to bowl and marinate for at least 30 minutes. Heat oil in heavy pot.

Mix flour, salt and pepper in shallow bowl; set aside. Remove chicken strips from marinade and discard sauce. Dip each strip in beaten eggs and dredge in flour mixture. Gently fry in oil for 2 minutes on each side. Keep in warm oven til ready to serve

Blend all ingredients for peanut sauce together in food processor til well mixed. Pour in additional coconut milk. This recipe makes a lot of creamy sauce. Add crushed red chili flakes.
