Green Bean Bundles
1 lb whole, fresh green beans
3-4 slice bacon, cut in thirds
1/3 c light brown sugar, firmly packed
1/2 tsp salt
1/4 tsp black pepper
Preheat oven to 325F degrees.
Combine green beans and enough water to cover in a large saucepan. Bring to a boil. Boil for 3 minutes.
Wrap 5 or 6 green beans with a piece of bacon and secure with a toothpick. Repeat procedure with remaining green beans and bacon.
Arrange bundles in a 13x9 baking dish. Sprinkle with brown sugar, salt and black pepper.
Bake bundles until bacon is crisp about 15 to 20 minutes.
**TIP: If you don't have fresh green beans use 2 - 14.5-ounce cans of canned green beans. Drain, rinse and drain one more time. Toss beans with 1 tbsp lemon juice for a taste of freshness before making recipe.
