Green Pie Submitted by Jack Mishleau
1 Large or 2 small cook n serve lemon pie filling
3/4 cup sugar
1 small box lime jello
1 Graham cracker pie crust
1/2 box cream cheese
1 small container whipped cream
1 small can crushed pineapple
1/2 cup toasted coconut
Make lemon pie as per instructions (minus 1/4 cup sugar) (Must be cook type)
Add eggs while cooking. Just as the pie filling is turning clear add the lime jello (do not add the water per the instructions)
Let cool 5- 10 minutes before it sets. Add to shell.
Use mixer to soften cream cheese,
Add whipped cream when mixed well fold in drained crushed pineapple and toasted coconut.( I like to put half of the coconut in the topping and half on top) Cover top of pie. Let set for an hour and serve.
