Instant Pot Beef & Broccoli
1 1/2 lbs boneless beef chuck roast, trimmed and sliced into thin strips
2 tsp olive oil
1 medium onion, finely chopped
4 cloves garlic, minced
3/4 cup beef broth
1/2 cup soy sauce
1/3 cup brown sugar
2 tblsp sesame oil
1/8 tsp red pepper flakes (optional)
1 lb broccoli florets, diced into bite sized pieces
3 tblsp water
3 tblsp cornstarch
toasted sesame seeds for garnish
Season the beef with pepper to taste. Put olive oil in the cooking pot and select browning or saute. When the oil begins to sizzle add meat and cook till browned. Remove from pot and put on a plate.
Add onion into pot and saute for 1 to 2 minutes until it softens. Add garlic and saute for another minute.
Stir in beef broth, soy sauce, sugar, sesame oil, and red pepper flakes. Stir until sugar is dissolved.
Add beef back into the pot. Put on lid and select high pressure and set for 12 minutes.
While that is cooking steam the broccoli with 1/4 cup water.
When beef is cooked turn off the timer and do a quick release. Once pressure is released, remove lid carefully.
In a bowl, combine cornstarch and water. Stir until smooth. Select simmer/saute and add to the beef. Stir until it thickens. Add steamed broccoli.
Serve over hot cooked rice. Garnish with sesame seeds.
