Instant Pot Onion Soup
5 medium onions, thinly sliced
4 tblsp butter
2 tblsp brown sugar
5 cloves garlic, minced
1 tsp dry thyme
1 tblsp worcestershire sauce
1 c red wine or beef broth
8 c beef broth
1/4 tsp salt & pepper
6 baguette slices
2 c gruyere or swiss cheese, grated
Turn on the Instant Pot and select Saute mode on high. Once it says hot, add butter and stir till melted.
Add sliced onions and brown sugar. Saute for about 15-20 minutes or until onions are golden brown and carmalized. Stir occasionally.
Add minced garlic, thyme, red wine or broth. Whatever is on hand. Add worcestershire sauce, salt and pepper. Stir 1-2 minutes.
Add beef broth making sure not to go over the Max line of inner pot.
Put on lid and make sure its set to seal. Cook on high pressure for 20 minutes. Natural release when done for 15 minutes.
After 15 minutes release the rest of the pressure. Remove lid.
Stir soup and serve into ovenproof bowls. Ladle into bowls and top with a piece of baguette. Add some cheese on top.
Broil in oven for 1-2 minutes or until melted.
