Italian Salad


1 tin garbanzo beans

1/2 cup sliced black olives

1 small green pepper, diced

1 small rib celery, chopped


1/2 cup olive oil

1/2 cup wine vinegar

1 large clove garlic, minced

1 tsp dried basil

1 tsp salt

1/2 tsp pepper


4 oz salami, in strips

2 tomatoes, seeded, diced

1 small sweet onion, chopped

2 tblsp minced parsley


Drain and rinse beans. Pat dry.

Combine beans with olives, green pepper, and celery.

Whisk together dressing ingredients until thick and well blended.

Pour over salad and toss to mix.

Top salad with salami, tomatoes, onion, and parsley.

Cover and chill for 2 hours before serving.
