Lentil Meatballs
Ingredients
1 cup cooked lentils
1/2 cup breadcrumbs
1/4 cup onion, finely chopped
2 cloves garlic, minced
1 tbsp. ground flaxseeds mixed with 3 tbsp. water
1 tbsp. tomato paste
1 tsp. dried oregano
1 tsp. dried basil
salt and pepper to taste
Olive oil for cooking
Directions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
In a large mixing bowl, combine the cooked lentils, breadcrumbs, chopped onion, minced garlic, flaxseed mixture, tomato paste, dried oregano, dried basil, salt, and pepper. Mix until everything is well combined and the mixture holds together when pressed.
Take small portions of the mixture and roll them into balls, about 1 inch in diameter, and place them on the prepared baking sheet.
Lightly brush or spray the lentil meatballs with olive oil to help them brown in the oven.
Bake the meatballs in the preheated oven for 20-25 minutes, or until they are golden brown and firm to the touch.
Once done, remove the meatballs from the oven and let them cool slightly before serving.
Serve over rice, noodles and also can use your favorite sauce.
