Low-Carb Chocolate Cottage Cheese Mousse
Ingredients
1 cup cottage cheese
2-3 tbsp. unsweetened cocoa powder
2-3 tbsp. low-carb sweetener
1 tsp. vanilla extract
pinch of salt
Optional: sugar-free chocolate chips or nuts for garnish
Directions
In a blender or food processor, combine the cottage cheese, cocoa powder, sweetener, vanilla extract, and salt. Blend until smooth and creamy.
Taste the mousse and adjust the sweetness or cocoa powder as desired.
Transfer the mousse to serving dishes and refrigerate for at least 30 minutes to firm up.
Garnish with sugar-free chocolate chips or nuts if desired
