2 egg whites
1⁄2 tsp vanilla
2 tbsp flour
1⁄2 cup granulated sugar
1⁄4 tsp salt
2 cups shredded coconut
Preheat oven to 350°F (180°C)
Line cookie sheet with waxed or parchment paper or foil
In a bowl, beat egg whites and vanilla until soft peaks form.
In another bowl, sift together flour, sugar and salt. Fold in beaten egg whites, then fold in coconut, blending thoroughly.
Drop by rounded teaspoonfuls, about 2 inches (5 cm) apart, onto prepared cookie sheet.
Bake in preheated oven for 20 minutes or until golden brown. Immediately transfer to wire racks to cool.
