Mashed Potato Chicken Chowder

Mashed Potato Chicken Chowder


2 cups chicken broth (from 32-oz carton)

1 can (11 oz) whole kernel sweet corn, undrained

2 cups chopped deli rotisserie chicken (from 2-lb chicken)

1 medium red bell pepper, chopped

2 medium green onions, sliced with tops (1/4 cup)

2 tablespoons butter or margarine

2 cups milk

1 pouch Cheese Sauce (from potatoes box)

1 pouch Betty Crocker Ultimate loaded mashed potatoes (from 10-oz box)


In 3-quart saucepan, heat chicken broth, corn, chicken, bell pepper, green onions and butter to boiling.

Cover; reduce heat. Simmer 5 minutes, stirring occasionally, until bell pepper is crisp-tender.

Stir in milk and 1 pouch Cheese Sauce until sauce is melted. Remove from heat; stir in 1 pouch Potatoes.

Serve immediately.
