1/2 cup Oat flour
1/2 cup Unbleached all-purpose flour
2 tbsp Vegan Pro - Maple Vanilla
1 tsp Baking powder
1 cup Unsweetened plant-based milk
1 tbsp Maple syrup
1 tsp Vanilla extract
Pinch of salt
1/2 tbsp Canola oil
In a large bowl, combine all the ingredients (except the oil) with a whisk.
In a large skillet, brush some canola oil. Turn the heat to medium for 2 minutes.
For each mini pancake, pour in about 1/2 tbsp of dough and cook for about 1 minute on each side. Repeat until you finish the dough mix.
Enjoy the mini pancakes with maple syrup, fruits (like strawberries) and chocolate chips. Some people also like to eat them like cereals; in a bowl with milk!
