Mini Strawberry & Lemon Cheesecakes
Ingredients
1 pack of Honey Graham Crackers (8 long)
1 8 oz. pack cream cheese
1 egg
1 egg white
¼ cup white sugar
1 ½ tsp. vanilla extract
1 cup strawberries (sliced)
1 tbsp. lemon zest
¼ cup light brown sugar
2 tbsp. Unsalted Butter
1 tsp. cornstarch
Directions
Let cream cheese and egg get room temp.
In medium bowl add softened cream cheese, white sugar, vanilla, lemon zest egg and cornstarch
Blend with mixer
In blender puree ½ cup of strawberries, pour puree into small bowl and then add additional strawberries and set aside
Place crackers in a large Ziploc close and crush with rolling pin or large drinking glass
In small microwaveable dish melt butter, add crushed cracker crumbs to med bowl add sugar mix well, and then pour in melted butter and mix making sure that all of cracker crumbs are coated with butter
Preheat oven 350⁰
In small single serving dessert dish add graham cracker mixture to bottom of each dish and lightly press with back of teaspoon
Lightly coat each with egg white and place in oven for approx. 7 minutes
Once crust has cooled fill with cream cheese mixture (slightly shy of the rim)
Bake approx. 15-18 minutes
Once cooled top with strawberry mixture and fresh lemon zest (to taste)
