Polenta Pizza Bites
1 tube Polenta, cut into 1/2" rounds
1/2 cup pizza sauce
1/2 cup vegan cheese
Toppings of your choice (minced basil, sliced bell peppers, chopped black olives, chopped mushrooms, garlic, onion etc.)
Preheat oven to broil.
Line a baking sheet with a piece of parchment paper and lightly spray with olive oil.
Place polenta rounds on the baking sheet and broil for 2 minutes.
Remove from oven and flip over with a spatula.
Spread on the pizza sauce, vegan cheese, and toppings of choice.
Broil another 2 minutes or until the vegan cheese melts to your liking.
