Porcupine Meatballs


1 pound lean ground beef or ground turkey

1/2 cup uncooked minute rice

1 egg, lightly beaten

1/4 cup finely chopped onion

3/4 teaspoon salt

1/4 teaspoon pepper

2 tablespoons vegetable oil

2 cans (8 oz. each) tomato sauce

1 can (14.2 ounces) diced tomatoes


Mix ground beef, rice, onions and seasonings.

With hands, shape into small meatballs and fry in a large skillet in oil, turning frequently until browned lightly on all sides

Transfer to crock pot. Add tomato sauce.

Cover and cook on LOW for 5 to 7 hours.
