
Ingredients:
1 cup whole wheat flour
1/2 cup rolled oats
1/2 tsp. baking powder
1/2 cup grated carrots
1/2 cup unsweetened applesauce
1/4 cup water
1 egg
Instructions:
Preheat your oven to 350°F. and grease a muffin tin.
In a large bowl, combine the whole wheat flour, rolled oats, and baking powder.
Add the grated carrots, applesauce, water, and egg to the dry ingredients. Mix until well combined.
Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool completely before serving.

Store any leftovers in an airtight container in the refrigerator.
