Cottage Cheese Pumpkin Pie Bars

Ingredients:
2 cups cottage cheese
1 cup pumpkin puree
1/2 cup maple syrup
1/2 cup almond flour
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ginger
1/4 tsp. salt
3 eggs
1 tsp. vanilla extract
Instructions:
Preheat oven to 350°F. Grease an 8x8 inch baking dish.
In a large bowl, blend cottage cheese, pumpkin puree, maple syrup, and vanilla extract until smooth.
Mix in almond flour, cinnamon, nutmeg, ginger, and salt until fully combined. Then, add the eggs one at a time, mixing well after each addition.
Pour the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes, or until the edges are set and a toothpick inserted in the center comes out clean.
Allow bars to cool in the dish before slicing into squares. Serve chilled or at room temperature.
