
Ingredients:
1 1/2 cups green beans, fresh or frozen, cooked, finely chopped
1 cup oat flour or finely ground rolled oats
1 egg, lightly beaten
2 tbsp. plain unsweetened yogurt (no xylitol)
2–4 tbsp. water more if needed for dough consistency
Instructions:
Preheat the oven to 325°F. Line a baking tray with parchment paper.
In a bowl, combine the finely chopped green beans, oat flour, yogurt, and beaten egg.
Mix thoroughly, adding water one tablespoon at a time until a firm, moldable dough forms.
Divide the dough into small portions and roll each into stick shapes about 2–3 inches long and finger width thick.
Arrange the sticks on the prepared baking tray with space between them.
Bake for 30–35 minutes until set and lightly firm.
Reduce oven temperature to 250°F and continue baking for 30–45 minutes to gently dry and harden the sticks.
Turn off the oven and allow sticks to cool completely inside to finish crisping.

Store in an airtight container in the refrigerator for up to 7 days. Freeze for up to 3 months. Thaw at room temperature before serving.
