1 lb ground chicken
1/2 cup breadcrumbs
1/2 cup grated parmesan cheese
1/4 cup milk
1/4 cup finely chopped fresh parsley
2 cloves garlic, minced
1 small onion, finely chopped
1 large egg
1 tsp. dried oregano
1/2 tsp. salt
1/2 tsp. black pepper
1 tbsp. olive oil
1/4 cup melted butter
2 tbsp. grated parmesan cheese
1 clove garlic, minced
1/2 tsp. dried parsley
1/4 tsp. salt
1/4 tsp. black pepper
Instructions:
Preheat oven to 375°F and lightly grease a loaf pan with olive oil.
Mix ground chicken, breadcrumbs, parmesan, milk, parsley, garlic, onion, egg, and spices in a large bowl until combined.
Transfer the mixture to the loaf pan, shape it, and bake for 40-45 minutes.
Stir together the melted butter, parmesan, minced garlic, parsley, salt, and pepper to make the glaze.
Brush the garlic parmesan glaze generously over the cooked meatloaf.
Return the pan to the oven and bake for 5 more minutes to set the glaze.
