
Ingredients:
3 cups cooked corned beef, chopped or shredded
2 cups sauerkraut, drained well
1 cup shredded cheese
1/2 cup cottage cheese
1/2 cup sour cream
1/4 cup mayonnaise
2 tbsp. sugar-free ketchup
1 tbsp. mustard
1 tsp. garlic powder
1/2 tsp. onion powder
1/4 tsp. black pepper
Optional Topping
1/4 cup shredded cheese
1 tbsp. chopped parsley
sliced pickles for the top
Instructions:
Preheat oven to 375°F. Grease a baking dish.
In a bowl, mix cottage cheese, sour cream, mayonnaise, ketchup, mustard, garlic powder, onion powder, and pepper until smooth.
Spread half of the corned beef in the dish. Layer drained sauerkraut evenly on top. Spread the creamy mixture over the sauerkraut.
Add remaining corned beef on top. Sprinkle evenly with cheese.
Bake for 25–30 minutes until hot and bubbly with melted cheese.
Let rest for 5 minutes before serving.
