
Ingredients:
4 large yellow onions
3 tbsp. olive oil
2 tbsp. vegan butter
4 cloves of garlic
1 tbsp. flour
6 cups vegetable broth
1 tbsp. balsamic vinegar
1 bay leaf
salt & pepper
1 tsp. dry thyme
**Optional topping: toasted baguette slices + vegan cheese
Instructions:
Warm the oil & butter in a big pot on the medium. Add onions. Cook for about 10 minutes. Reduce the heat. Keep cooking for another 20 minutes by stirring them till caramelized.
Add the garlic and cook for one minute. Add the flour to the onions & mix. Cook for 1 minute. Add the vegetable broth and stir to mix it. Add the black pepper, bay leaf, thyme, and salt, and stir the seasoning.
Start simmering, cooking for twenty minutes. Add the balsamic vinegar in the soup. Taste the soup and alter the seasoning if required. Remove the bay leaf.
Add the soup to the serving bowls. Sprinkle some cheese over the soup and serve with bread.
