Zucchini Turkey Patties

Ingredients:
For the patties
1 lb. ground turkey or chicken
1 medium zucchini, grated (squeeze out excess water)
2 green onions, sliced, saving some for topping
1 egg
⅓ cup breadcrumbs
1 tsp. garlic powder
1 tsp. onion powder
½ tsp. salt + ½ tsp. black pepper
1 tsp. Italian seasoning, optional
1–2 tbsp. oil for pan-searing
For the fresh sides
1 cucumber, sliced
2 tomatoes, sliced
1–2 cups shredded carrots
Extra green onion for garnish
*Optional quick drizzle: olive oil + lemon juice or your fave vinaigrette
*Pinch of salt, pepper, and red pepper flakes
Instructions:
Grate the zucchini, then squeeze it really well in a towel. This keeps your patties from getting soggy and makes this an easy dinner win.
In a bowl, combine turkey, zucchini, egg, breadcrumbs, green onions, and seasonings. Mix just until combined, don’t overwork it so the patties stay tender for a high-protein bite.
Form into 6–8 patties. Heat oil in a skillet and cook 4–5 minutes per side until browned and cooked through. You’ll get that golden outside that tastes better-than-takeout in the best way.
Slice cucumbers and tomatoes, pile on shredded carrots, and sprinkle green onions over everything. A quick lemon-olive oil drizzle makes it feel like a legit healthy meal.
