Rice Noodle Soup
1 tbsp vegan butter/ normal butter if non-vegan
1 carrot diced
4-5 broccoli florets
1/2 cup corn
3-4 leaves with stem bok choy
2-3 cups Water
1 tsp vegetable stock powder
1/2 cup cooked rice noodles
1/4 cup chopped green onions
Salt and Pepper as per taste
In a pan,add butter/oil and saute the veggies (carrots,broccoli,corn,bok choy) for 4-5 minutes
Add water to this along with vegetable stock powder.
Add cooked noodles to this soup.
Add salt and pepper along with some lemon juice,let it come to a boil.
Garnish chopped green onions and serve hot.
