Salsa with Endive
4 medium plum tomatoes, seeded and chopped
1/2 medium green bell pepper, diced
1/2 medium orange bell pepper, diced
1 bunch scallions (green onions), chopped
1 medium lime, juiced
1 pinch ground black pepper
1 pinch cayenne pepper
fresh cilantro (for garnish)
Combine all ingredients (except endive and cilantro) in a bowl.
Let stand for two minutes so tomatoes can marinate in lime juice.
Serve surrounded by endive leaves, and garnish salsa with cilantro.
