Shoo Fly Cake
4 cups all purpose flour
2 2/3 cups brown sugar
1 cup butter
1/2 teaspoon salt
2 cups boiling water
1 cup molasses
2 teaspoons baking soda
Preheat oven to 350. Grease a 9×13 baking pan.
Mix flour, brown sugar, butter, and salt together and work into crumbs. Save 1 and 1/2 cups of crumbs for the top of the cake.
Combine hot water, molasses, and baking soda, mixing well. Add 1/2 of liquid to crumbs. Mix until moist and smooth. Add remaining liquid and mix. It will be a bit runny.
Pour into prepared baking pan and top with reserved crumbs. Press crumbs lightly into top. Bake for 45 minutes.
