Spinach Garlic Noodles
8 ounces of spaghetti noodles
2 tablespoons olive oil
4 cloves garlic, minced
4 cups fresh spinach leaves
1 tablespoon soy sauce
Salt and pepper to taste
Red pepper flakes (optional, for added heat)
Grated Parmesan cheese (optional, for garnish)
Cook the spaghetti noodles according to the package instructions until al dente. Drain the noodles and set them aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant and lightly golden.
Add the spinach leaves to the skillet and toss them with the garlic oil. Cook for about 2-3 minutes until the spinach wilts down and becomes tender.
Add the cooked spaghetti noodles to the skillet with the spinach and garlic. Toss everything together to combine.
Drizzle the soy sauce over the noodles and season with salt and pepper to taste. If you like spicy food, you can also add a pinch of red pepper flakes at this point.
Continue to cook the noodles for another 2-3 minutes, stirring occasionally, until everything is heated through and well combined.
Once the noodles are ready, remove them from the heat and transfer them to serving plates.
If desired, sprinkle some grated Parmesan cheese on top for added flavor.
