1 Tbs. butter

1/2 c sweet onion or shallots

1 bag of baby spinach

salt & pepper

1 c shredded cheese (cheddar or swiss)

4 eggs

1 cup milk or half and half

1/16 teaspoon nutmeg

dash of dill

pie crust


Saute onion in butter till soft and add spinach one handful at a time until wilted. (2-3 minutes). Transfer to colander and press out as much liquid as you can.

Bake pie crust in for 8-10 min. (if you like a crispy crust) If not don't bake it first.

Beat eggs, milk , nutmeg, dill, salt and pepper together.

Place spinach and cheese into crust and pour egg mixture over.

Bake for 30-40 min. Let set for 10-15 minutes before serving
