Stuffed Portobello Mushrooms
5 large portobello mushrooms cleaned and take the gills out
1 tablespoon of olive oil
1 can of kale, (drained)
3 cloves of garlic, crushed and diced
1 tablespoon parmesan cheese
5 slices of bacon
Ninja foodie with saute setting on Hi put in 1 tbsp of olive oil in and then place the mushrooms smooth side down in the foodie on the sauté setting for 1 minute.
Take them out set aside on a plate.
Cook the bacon till crisp, leave the bacon drippings but take out the cooked bacon, set aside.
Throw in the garlic brown for a minute or 2 then add kale and parmesan cheese. Cook for a few minutes.
Add bacon back in cook a few minutes. Add some pepper. Take it out of the foodie place on plate.
Spoon mixture into the portobello mushrooms and top with mozzarella cheese. Place 2 mushrooms at a time in foodie on the crisp setting, 390 degrees, cook for 20 minutes.
