Sun-Dried Tomato with Goat Cheese Spread
4 oz jar sun-dried tomatoes in oil
1/2 cup olive oil good quality
1 clove garlic (I threw in extra because I love garlic)
2 sprigs fresh parsley
5 fresh basil leaves or 1 tsp dried basil
1/4 tsp red cayenne pepper
1/2 tsp kosher salt
pinch of sugar
1 green onion, coarsely chopped
10-12 oz goat cheese
Combine everything but the goat cheese & crackers in a food processor (NOT a blender) until smooth consistency.
Break goat cheese onto serving bowl and top the cheese with the tomato mixture. Make sure you break up the goat cheese in small enough pieces to be spread on the crackers.
