4 large sweet onions, thinly sliced

2 tablespoons olive oil

1 cup vegan mayonnaise

1 cup vegan sour cream

1 cup breadcrumbs

1 cup vegan Parmesan cheese, grated

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

Fresh chives for garnish


Preheat the Oven: Preheat your oven to 350°F (175°C).

In a large skillet, heat the olive oil over medium heat. Add the thinly sliced sweet onions and sauté until they become soft and golden brown, about 10-15 minutes. Season with salt and pepper to taste.

In a mixing bowl, combine the vegan mayonnaise, vegan sour cream, garlic powder, and dried thyme. Mix well until the ingredients are thoroughly combined.

In a large baking dish, layer half of the sautéed onions at the bottom. Spread half of the sauce mixture over the onions. Repeat the process with the remaining onions and sauce, ensuring an even distribution.

Sprinkle the breadcrumbs and vegan Parmesan cheese over the top of the casserole, creating a deliciously crunchy crust.

Place the casserole in the preheated oven and bake for 25-30 minutes or until the top is golden brown, and the casserole is bubbling around the edges.

Once out of the oven, let the casserole rest for a few minutes. Garnish with fresh chives. Slice and serve warm.
