Sweet Potato Casserole


1 cup brown sugar

2/3 cup all-purpose flour

1 cup chopped pecans

5 tablespoons butter, melted

8 cups mashed sweet potatoes

1/2 cup granulated sugar

1/2 teaspoon salt

1 teaspoon vanilla

2 eggs, beaten

3 tablespoons butter


Preheat oven to 350 degrees.

Combine brown sugar, flour, pecans, and melted butter in a mixing bowl. Set aside.

In another mixing bowl, combine sweet potatoes, sugar, salt, vanilla, egg, and butter. Mix well.

Pour mixture into a buttered 3-qt baking dish. Top with the pecan mixture.

Bake for 35-45 minutes, until topping has browned slightly.
