Upside Down Pizza Casserole with Breadstick Crust


2 tablespoons olive oil, divided

1 medium onion, diced

2-3 cloves garlic, minced

1 red pepper, diced

1 cup sliced fresh mushrooms (optional)

1 pound Italian sausage

1 (24 oz.) jar marinara sauce (or your own homemade sauce)

1 can (2.25 ounces) sliced olives (optional)

Dash pepper

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

1/2 teaspoon dried fennel seeds

1 1/2 cups shredded mozzarella cheese

1/2 cup shredded Parmesan cheese

1 teaspoon garlic salt

1 Pizza Crust


Heat 1 tablespoon olive oil in a large skillet over medium high heat. Add the onions, garlic, red pepper and mushrooms and cook until vegetables are tender, about 5 minutes. Remove sausage from casings, if necessary, and add to the skillet. Cook, breaking up sausage with a wooden spoon, until sausage is cooked through. Stir in the marinara sauce, pepper, oregano, basil and fennel seeds and simmer for another 5 or 10 minutes.

Spray a 9x13 pan with non-stick cooking spray. Pour the sausage mixture into the prepared pan. Top with mozzarella and Parmesan cheese. Preheat oven to 400 degrees. After the pizza dough has doubled in size, turn it onto a lightly floured surface and using your hands or a rolling pin, shape it into a rectangle that is slightly larger than your pan, about 10x14 inches. Place the dough on top of the cheese layer in the pan (you should have extra dough hanging over the edge of the pan on all sides). Roll the extra dough inward to form a breadstick like crust. Brush the entire crust, including the edges, with an additional tablespoon of olive oil. Sprinkle with garlic salt. Bake for 20-25 minutes, or until the crust is golden brown.
