Vanilla Bean Creme Brulee
Ingredients
2 cups heavy cream
1 vanilla bean, split lengthwise and seeds scraped out
5 large egg yolks
1/2 cup granulated sugar, plus extra for caramelizing
Directions
Preheat your oven to 325°F (160°C). Place six ramekins in a baking dish and set aside.
In a saucepan, combine the heavy cream and the scraped vanilla bean seeds along with the pod. Heat the mixture over medium heat until it starts to simmer. Once it simmers, remove it from heat and let it steep for about 15 minutes to infuse the cream with vanilla flavor.
In a mixing bowl, whisk together the egg yolks and sugar until well combined and slightly thickened.
After the cream has infused, remove the vanilla bean pod and discard it. Gradually pour the warm cream into the egg yolk mixture, whisking constantly, until well combined.
Strain the mixture through a fine-mesh sieve into a clean bowl to remove any cooked egg bits or vanilla bean fibers.
Divide the mixture evenly among the ramekins. Place the baking dish with the filled ramekins on the oven rack, then carefully pour hot water into the baking dish to reach halfway up the sides of the ramekins, creating a water bath.
Bake for 35-40 minutes, or until the edges are set but the center still jiggles slightly when shaken.
Remove the ramekins from the water bath and let them cool to room temperature. Then cover and refrigerate for at least 4 hours or overnight to chill and set.
Just before serving, sprinkle a thin, even layer of granulated sugar over the top of each Creme Brulee. Use a kitchen torch to caramelize the sugar until it forms a golden-brown crust.
Allow the caramelized sugar to harden for a minute or two, then serve immediately and enjoy your delicious Vanilla Bean Creme Brulee!
